Prepare Plant Based Chopsuey

Step 1
For Manchurian Balls:
- a. Mix all the ingredients in a steel bowl and let it rest for 15 minutes.
- b. Shape the mixture into small balls.
- c. Fry the Manchurian balls in hot oil for 60 seconds until golden brown. Set aside.

Step 2
For Chopsuey:
- a. Boil the fresh noodles in enough water for 10-15 minutes. Drain and set aside.
- b. Heat oil in a pan and add chopped garlic, ginger, and all the sliced vegetables. Stir-fry for 3-4 minutes, ensuring the vegetables remain crisp. Add salt and pepper to taste.
- c. Add black pepper sauce, Manchurian sauce, and hot garlic sauce. Pour enough water to make a thick sauce. Add corn starch slurry if required.
- d. Add the boiled noodles to the sauce and cook for 2 minutes on medium flame.
- e. Add fried Manchurian balls and mix well.
