Step 1
Roasting the Spices:
- a. Begin by dry roasting cinnamon sticks, mace, aniseeds, green cardamom pods, cloves, and black peppercorns until fragrant.
- b. Add coriander seeds to the roasted spices and continue to dry roast until all the spices are aromatic.
- c. Transfer the roasted spices to a bowl. Roast dry red chilies until they are fragrant, then set aside.

Step 2
Roasting the Grated Coconut (Soye):
- a. Dry roast grated coconut until golden brown. This imparts a distinct character to the Xacuti Curry. Preparing the Masala Paste:
- b. Grind the roasted spices, roasted coconut, and dried red chilies into a fine powder using a mixer grinder.
- c. Heat coconut oil in a pan and add curry leaves, green chilies, garlic, and onions. Cook until the onions turn golden brown.
- d. Add poppy seeds, turmeric powder, salt, and tamarind to the onions. Cook for 2 to 3 minutes.
- e. Grind the cooked mixture into a smooth paste. This forms the base masala for the curry.
- f. Add Spices & Coconut Powder to the pan & cook for 5-7 minutes.

Step 3
Cooking the Xacuti Masala:
- a. Heat coconut oil in a pan and add the ground masala paste. Cook for 5 minutes until the masala is aromatic and well-cooked.
- b. Add the chicken pieces to the masala. Cook for 7-10 minutes until the chicken is tender. Add water if required.
- c. Once the chicken is cooked, add Maggi® Coconut Milk to the curry. Stir well to combine.
- d. Cook the curry for an additional 5-10 minutes until it thickens and reaches a creamy consistency. Finishing Touches:
- e. Garnish the Xacuti Chicken Curry with fresh coriander leaves.
- f. Plate the dish and serve hot with rice or bread.
