How to Make Thouthe Kodel

Prepare Thouthe Kodel

  • Step 1

    Preparing the Toor Dal:

    • a. In a pressure cooker, combine the toor dal with 15 cups of water, turmeric powder, and salt.
    • b. Close the cooker and pressure cook until one whistle. Then, reduce the heat to low and simmer for 3 to 4 minutes.
    • c. Once cooked whisk the dal until smooth. Set aside.
  • Step 2

    Cooking the Mangalore Cucumber (Thouthe):

    • a. In the pressure cooker, combine the cut Mangalore Cucumber (Thouthe), drumstick, and tamarind water.
    • b. Add salt, close the pressure cooker and pressure cook until 2 to 3 whistles.
  • Step 3

    Preparing the Masala:

    • a. Dry roast coriander seeds, cumin seeds, urad dal, methi seeds, peppercorns, and byadgi chilies in a small pan until fragrant.
    • b. Blend the roasted ingredients with garlic in a food processor.
  • Step 4

    Combining All Ingredients:

    • a. In a large saucepan, combine the cooked and whisked dal, the cucumber tamarind curry, and the masala. Stir well and place the saucepan on medium heat.
    • b. Bring to a boil, then reduce the heat to low and add the Maggi® Coconut Milk. Simmer for 10-12 mins. Add more water if required.
  • Step 5

    Preparing the Seasoning:

    • a. Heat oil in a small pan, & add mustard seed, dry red chillies, aniseeds and allow the seeds to crackle. Add temper for 30 second.
    • b. Add tempering to the Dal Mixture.
  • Serving Suggestions: Transfer the Thouthe Kodel (Mangalore Cucumber Curry) to a serving bowl and serve it hot with warm steamed rice.
